Fried
brinjal and prawns in coconut milk
Ingredients
2 round green brinjals - cut into round slices
100 medium sized prawns- shelled
2 big tomatoes - chopped into small pieces
1 big onion - sliced
Chilli powder - 2 dessert spoons
Coriander seeds powder - 2 dessert spoons
Jeera powder - 2 tsp
Garam masala powder
Pepper pd - 2 tsp
Turmeric powder - 1 tsp
Milk of 1 whole coconut - thick and thin milk should be kept separately
Coriander leaves - chopped into fine piece
Oil for frying
Salt to taste
Method:
1. Apply salt to the brinjal slices and keep aside for 5 - 10
minutes, squeeze the slices and remove the water contents from
it.
2. Apply salt to taste, turmeric powder and pepper powder to the
shelled prawns and keep it aside.
3. Heat oil and fry the sliced brinjal few at a time to a light
golden brown colour and keep aside.
4. In the same oil fry sliced onion to make it soft and then add
chopped tomatoes stir it for sometimes add chilli, jeera, coriander
powder, stir fry for 5 minutes
5. Add the prawn, stir fry for another 5 minutes and then add
the 1 cup thin coconut milk and bring it to boil
6. Add the fried brinjal pieces and simmer for 5 minutes, check
the salt and finally add the coconut milk, garam masala powder
and finely chopped coriander leaves.
7. Serve hot along with rice.
Tips: Instead of prawns you can also use chicken pieces.
