Chicken sukka


Ingredients

Ingredients: 1 fairly large fowl
Fry separately in a little oil and grind the below ingredients together to a fine paste
1. 35 red long chillies
2. 20 pepper corn
3. ¼ tsp fenugreek seeds
4. 1 heaped tbsp coriander seeds
5. ½ tsp turmeric powder
6. 1 marble-sized ball of tamarind

Coarsely grind the below ingredients with out using any water
1. 1 tsp cumin seeds (jeera)
2. 1 medium sized pod
3. 1 medium coconut grated
Remove the masala in a lump and keep it aside
· 2 large sizes sliced onions

Method:
1. Clean and cut the fowl into medium size pieces.
2. Mix the chicken pieces with the first masala with enough water to cook and place on the fire
3. When it starts boiling add salt to taste and when the chicken is half cooked add the sliced onions
4. When the chicken is fully cooked and the masala is sufficiently dry, but not quite dry , add the second masala and stir fry for sometime

Seasoning:

1. 2 tbsp ghee
2. 1 wide vessel
3. 2 large onion sliced thinly

Heat oil in a wide vessel and fry the sliced onions when reddish brown and the above cooked curry and mix well

Tip: you can squeeze the juice of 1 lime and add finely chopped coriander leaves for added taste.
