Mangalorean Pathrodey
Ingredients:
Colocascia ( Kesuvina ) leaves - 20-25
Rice - ½ kg
Grated coconut - ¾
Coriander seeds - 6 tsp
Cumin seeds - 1 tsp
Red chillies ( red pepper ) - 10-12
Jaggery - ½ cup crushed
Tamarind - 1 big lemon sized ball
Salt to taste
Method :
Soak the rice for 3 hrs and grind all the ingredients
( except leaves ) with rice to make a thick batter.
Wash and clean the leaves and remove thick stalks if any.
On a flat surface place a leaf reverse side up and spread the
batter on it evenly. Place another leaf over it and spread the
batter over this again. Repeat 2 more times.Then fold both sides
of the leaves & roll the leaves without leaving open ends.
Repeat with the remaining leaves. Each roll should contain 4 to
5 leaves. Steam the rolls for 30 minutes.
Cool and serve dotted with butter or gghee.
This can be served for lunch or dinner.
