Vegetable Pulav
Ingredients
Basmati Rice - 1 Cup
Mixed long cut vegetables - 3 cups
(Beans, carrot, Cabbage, Cauliflower, Beetoot, peas, potatoes,
capsicum..etc)
Garlic and Ginger paste - 1 spoon
Garam Masala Powder
Oil
Curry Leaves - 8 to 10
Green Chilleys - 8
Grated Coconut - 1/2
Mint leaves - 2
Coriander leaves - 1 bunch
Turmeric powder - little
Salt to taste
Water 2 cups
To prepare masala : Grind together grated coconut, green chillies,
mint leaves, coriander leaves, ginger garlic paste and turmeric
powder.
Preparation : Heat oil in a pressure cooker. Add all vegetables
and fry for 5 minutes. Add ground masala to vegetables and fry
till it leaves oil and add water. Whne water starts boiling, put
basmati rice and pressure cook for 2 whistles in a medium flame.
Garnish with onions and cashewnuts serve hot.
