Bhindi Gojju


Ingredients

Bhindi (Ladies finger) - 1/4 kg
Bengal Gram (chana) - 3 tbsp
Red Chillies - 15
Dessicated Coconut - 1/2 cup
Tamarind - 1 lemon size
Fenugreek seeds (methi) - 1/4 tsp
Thyme Seeds (Thil)- 1 tsp
Jaggery to taste
Oil - 5 tbsp
Mustard Seeds - 1/4 tbsp
Asafoetida (hing) - 1 pinch
Water - 1 1/2 cups
Salt to taste

Method : Soak tamerind in water for 45 minutes. Fry bengal gram, red chillies, methi seeds and thyme in a pan with 1 tsp of oil. grind the fried ingredients along with dessicated coconut using water.
Cut the ladies finger into small pieces. heat oil in the pan, let the mustard seeds splutter, add asafoetida. Add the ladies finger pieces in the oil and fry on medium flame till it is cooked properly. Now add the tamarind pulp, jaggery, ground paste and salt and bring the mixture to boil. Let the curry thicken.
You can add water if you feel the gravy is too thick and let it boil.
Serve hot with Chapatis.
